Ingredients:
2 cups brown rice
2 ½ cups water
1 can coconut milk
½ teaspoon salt
Directions:
Wash and drain rice.
Bring water, coconut milk, and salt to a boil.
Add rice.
Reduce heat to low and cover.
Simmer 45 minutes until rice is cooked.
Notes:
Use leftover rice for creamy and delicious breakfast porridge.
